Spinach ricotta frittata

Ingredients
2 Tbsp olive oil6 large eggs3/4 cup part skim ricotta1 package frozen spinach
Directions
Preheat oven to 375.
Coat an oven-safe skillet with 2 Tbsp olive oil. Heat on stove over medium heat.
Mix eggs, ricotta, and spinach in a bowl.
Cook until the eggs have started to set, about 3-5 minutes, then transfer to the oven.
Bake 25-35 minutes. until eggs are fully set. Turn out onto a plate and serve, or eat at room temperature.
