30 Minute Minestrone

Ingredients
2 md carrots, chopped1 c chopped cabbage1 celery rib, thinly sliced1 small onion, chopped1 garlic clove, minced2 tsp canola oil3 cups water1 can stewed tomatoes3 low-sodium beef bouillon cubes1 c torn fresh spinach2/3 c cooked elbow macaroni1/4 tsp pepper
Directions
In a 3-qt Saucepan, saute carrots, cabbage, celery, onion and garlic in oil for 5 minutes. Add water, tomatoes, and bouillon; bring to a boil. Reduce heat. Simmer, uncovered for 20-25 minutes or until vegetables are tender. Stir in spinach, macaroni and pepper. Heat through.
