Pumpkin "Whey Surprise" Baked Oat Muffins

1 ripe mashed banana1 cup pumpkin puree1/3 cup apple sauce1/4 cup maple syrup, honey or other sweetener2 cups liquid whey (or other liquid like milk)1/4 cup ground flax seeds2 tsp cinnamon, tsp nutmeg, 1/2 tsp gingerpinch salt2 3/4 cup oats 1/2 tsp baking soda and baking powder2/3 cup of chopped walnuts
-Preheat oven to 400 and grease muffin tins.
-Mix together first 8 ingredients thoroughly then stir in the oats, baking soda and baking powder. Lastly, fold in the walnuts.
-Using 1/4 cupfuls, scoop batter into 18 muffin tins.
-Bake for around 30 minutes or until the edges are beginning t brown and a knife comes out clean.
*baking time is pretty lenient; the longer you bake the firmer and less moist the muffins will be*
