Stuffed Peppers - Carne Asada

*Peppers, sweet, red, fresh, 8 medium (approx 2-3/4" long, 2-1/2" *Roast Beef - Slice, 20 oz Cheddar Cheese, 1 cup, shredded Onions, raw, 1 large
Cut the peppers in half, clean out the seeds. Boil for 3 minutes. Cook two cups of rice as per package instructions. Slice the onion into rings. Slice the carne asada or roast beef into thin slices. Cook the onion and carne asada in chicken or beef broth until meat is browned.
Place the pepper halves in a baking dish, hollow part up. Spoon rice and meat and onions into the peppers. Cook for about 25 - 30 minutes until the peppers are at desired crispness. Sprinkle cheese on top and bake for another 5 minutes or until the cheese is melted.
Serving Size: Two halves equals one serving
