Peppermint Patties

Ingredients
1 cup mashed potato2 tbsp butter1 tsp salt2 tsp peppermint extract6-8 cups powdered sugar (nutritional info with 8)Semi sweet chocolate chips (as needed but a few cups)
Directions
combine mashed potato, butter, salt and extract. slowly add in powdered sugar until you get a dough. The mixture will get VERY soupy in the beginning. Just keep adding sugar until you get the texture needed. Sometimes you will need more than the 8 cups but it still comes out great.

Make small balls and pat flat on to wax paper.

Allow to dry overnight or pop in the freezer for a while to firm them up

Melt chocolate in a double boiler or microwave

dip patties into chocolate and allow them to cool.

I made 40 pretty large patties so by making them smaller you can get more and have them not as high in calories :) Enjoy!
