Oven Barbecue Chili

Ingredients
1.5 pounds boneless beef chuck pot roast or beef stew meat, cut into 1/2-inch cubes4 garlic cloves, pressed2 cups coarsely chopped onions2 cups diced green bell pepper2 cans (15 oz each) black beans, drained and rinsed2 cans (14.5 oz each) diced tomatoes in sauce, undrained1 can (8 oz) tomato sauce3/4 cup smoky barbecue sauce2 TBSP cider vinegar2 TBSP chili powderOptional toppings not included in calorie count: reduced-fat shredded cheddar cheese, reduced-fat sour cream and sliced green onions
Directions
1. Preheat oven to 350 degrees F. Trim any visible fat from meat. Cut meat into 1/2-inch cubes and place in roasting pan (or PC Stoneware Baking Bowl). Press garlic over meat. Coarsely chop onions and dice bell pepper. Add onions, bell pepper, beans, tomatoes, tomato sauce, barbecue sauce, vinegar and chili powder to meat. Mix well.
2. Cover dish and bake 2 1/2 hours or until meat is tender. Remove from oven carefully. Serve with toppings if desired.
