Mock Mashed Potatoes

Ingredients
1 head cauliflower; cooked until easily mashed1 packet chilcken boullion1/4 tsp pepper1 cup, chopped onion2 tbsp margarine2 tbsp non-fat milk
Directions
Preheat oven to 375. Cook cauliflower till easily mashed with fork. Drain well and mix with all ingrediencts except milk. Mixing with a food processor works well. Add milk slowly and mix well. Spray oven proof dish with cooking spray and put in mixture. Add pats of extra butter (optional). Bake 15-20 minutes until hot.
