Frozen carrots 1 1/3 cupFlour 1 cup Cinnamon, ground, 2 tsp Nutmeg, ground, 1 tspBaking Powder, 1 tspBaking Soda, 0.5 tsp **Flax Seed Meal (ground flax), 2 tbspGranulated Sugar, 6 tsp Sweetener, 4 packetsMilk of choice 0.25 cup Unsweetened applesauce 1/4 cupVanilla Extract, 1 tsp Icing (not included in nutritional count):Powdered Sugar, 4 tbsp2 Tbsp milk of choicedash of flavouring
Defrost frozen carrots in microwave. Chop finely in food processor. Stir into wet ingredients. In separate bowl, combine dry ingredients. Add to wet ingredients until fully combined. Spoon batter into 4 pregreased ramekins and bake at 350F for around 15 minutes, or until a knife comes out clean. Cool and remove from ramekins and slice cakes in half horizontally and fill with a spoon of icing. Enjoy
