Bake Oysters

Ingredients
2 tbsp no salt butter1 tsp garlic; finely chopped2 tbsp parsley; finely chopped2 tbsp butter; cut into pieces1 cup bread crumbs (Italian)24 oysters
Directions
In a heavy skillet, melt butter over moderate heat. When foam subsides, add bread crumbs, and garlic. Toss 2-3 mins. until crisp and golden. Stir in parsley and grated cheese. Put oysters in
shallow pan, lsrge enough to hold in single layer. Sprinkle crumbs on oysters. Dot the top with tiny bits of butter.

Preheat oven to 450 degrees F. Bake oysters in top third of oven for 12-15 mins. until the crumbs are golden. Juices in the dish should be bubbling. Serve at once.

    It was very good. I did not put the butter on top, because I thought it would burn at 450 degrees. I also put olive oil in bottom of baking dish. I will try it again. - 2/24/10
