Fruity Corn Bread Stuffing (Crock Pot) & Pork Chops

Ingredients
2 cups Corn Bread Stuffing mix1 cup low sodium chicken broth1 apple, chopped2 stalks celery, chopped1 medium onion, chopped1 cup fresh cranberries(Meat of your choice. I use 12 - 16 oz. of lean center cut boneless pork chops).
Directions
Mix all ingredients. Spray inside of crock pot with non-stick spray. Put half of stuffing mix into crock pot, cover with meat of your choice, cover with remaining stuffing mix. Cook on low 6 - 8 hours until meat is tender.

    This dish was very good, cornbread had a real nice taste, apple and cranberry add just the right tartness and the pork chop stayed really moist. Since this was a crock pot dinner and also a running day, it worked out real good; will do again. - 12/23/13
