Mary Jane's Pumpkin Pie

Ingredients
3 Crusts:3 cups flour3 sticks unsalted butter1.5 teaspoons salt1.5 teaspoons sugar3-6 Tablespoons cold waterPie Filling:1 large can pumpkin (28 oz.)2.25 cups sugar1 teaspoon salt3 eggs2 teaspoons cinnamon.5 teaspoon ginger3 teaspoons pumpkin pie spice3.5 cups scalded 2% milk3 Tablespoons flourTopping:3 Tablespoons butter.5 cup pecans (chopped).5 cup granulated sugar
Directions
Make crusts, chill for 1 hour, then roll out.
While chilling, mix all ingredients for pie filling.
Pour pie filling into crusts.
Mix pecan topping.
Bake at 350 degrees for 45 minutes; add pecan topping, bake another 15 minutes.
