slow cooker creamy cauliflower cheese soup

1 medium head cauliflower2 c. low sodium chicken broth1 c. onion chopped2 medium carrots2 cloves garlic chopped2 c. water3/4 c. skim milk1 c. shredded cheddar3 T. light garden vegetable cream cheese
Cut cauliflower into florets. Dice carrots. Place all ingredients except milk and cheese in a slow cooker. Cook on low for 8 hours. When cauliflower is tender, puree soup. Return to slow cooker and add milk and cheeses. Stir until cheeses melt. Serve or freeze.
