Vegetarian Black Bean Chili

Ingredients
2 ½ cup vegetable broth2 Tablespoons olive oil 3 cups yellow onion, chopped 2 Tablespoons chopped garlic¾ cup celery, chopped¾ cup carrots, chopped¾ cup red peppers, chopped2 ½ Tablespoons tomato paste2 Tablespoons honey1/3 cup sherry 5 cups black beans, canned 1 1/3 cups fresh tomatoes, chopped1 ½ Tablespoons chili powder¾ Tablespoons ground cumin1 teaspoon ground oregano
Directions
In a heavy pot, heat oil. Add onion. Sauté for 8 to 10 minutes. Add garlic, celery, carrot and red pepper. Sauté for 5 minutes.
Stir in tomato paste and honey. Mix well.
Add broth, sherry, black beans, tomatoes, chili powder, cumin and oregano. Bring to a boil. Reduce heat and simmer for 45 – 60 minutes.

Makes 10- 1cup servings.
