Cathy's Lite Sweet Mini Corn Muffins

Ingredients
1 package Jiffy Corn Muffin Mix1/4 cup Egg Beaters or Equivalent1/3 cup 2% Milk2 packets Equal (optional)
Directions
Prepare Jiffy Corn Muffin Mix as directed but with Egg Beaters or equivalent. Spray mini muffin pan with non-stick spray and add ONE slightly heaping tablespoon (TBSP) to each cup. Bake for approx 11-12 minutes or until outer edges golden brown. Cool on cooling rack. May freeze these for later consumption then thaw at room temp.
