Ingredients
1/2 cup quinoa4 bell peppers28 oz enchilada sauce2 small zucchini1 cup cilantrojuice from 1 lime1 small red onion15 oz can black beans1 cup shredded cheesepaprikacuminsaltpepper2 minced garlic cloves
Directions
Half Peppers, Prepare quinoa, Mix all ingredients and stuff the peppers, top with 28 oz can enchilada sauce and the cheese. 400 degrees for 30 minutes.
