2 boneless, skinless chicken thighs, browned and chopped1 quart chicken stock2 cups water1 can white beans, drained & rinsed1 medium sweet potato, peeled and diced1 small zucchini, diced1/2 cup onion, chopped1/2 cup celery, chopped1/4 red bell pepper, chopped3 large kale leaves, stemmed and chopped1 TBS gheeseasoning to taste
In large sauce pan, combine chicken broth, water, browned chicken, sweet potato, zucchini and bell pepper. Simmer gently. Saute onions and celery in ghee to soften. Add onions, celery, drained white beans and kale to soup and simmer gently for 30 or more minutes. Season to taste.
