Cornmeal Muffins

Ingredients
1/3 cup shortening1/3 cup brown sugar1 egg, beaten1 3/4 2% milk1 cup cornmeal1 cup whole wheat flour4 tsp. baking powder1/4 tsp. salt
Directions
Makes: 12 muffins

Beat shortening and sugar together. Add egg and beat until fluffy. Add milk.

Add dry ingredients.

Mix until just blended and portion into muffin cups.

Bake for 25 minutes in a 425 oven
