1 tsp. ground ginger4 cloves garlic3 tbsp. lemon juice1 c. plain yogurt1-2 tsp. curry powder2 tsp. salt2 tbsp. olive oil1 tsp. chili powder1/2 tsp. liquid hot pepper (Tabasco)1/2 tsp. orange or red food coloring (Optional)2 lbs. boneless skinless chicken breasts
Coarsely chop garlic. Place ginger, garlic, and lemon juice in blender and puree. Add yogurt, olive oil, and seasonings. Blend until well mixed. With point of knife, slash skinless chicken all over lightly. Place in shallow dish and pour yogurt sauce over chicken, reserving some to serve with dinner. Turn chicken, cover tightly, and marinate in refrigerator overnight or for several hours. Place in baking dish and bake at 400 degrees for 40 minutes, turning once. Broil for 1 or 2 minutes to brown.
