Sweet Potato Casserole

About 3 sweet potatoes (white flesh)1 granny smith apple, cored and chopped1/3 cup toasted pecans, choppeddark brown sugar to tastepumpkin pie spice, or a combination of cinnamon, nutmeg, gr cloves and gr allspice8oz carton coconut milk creamer
Scrub sweet potatoes, leaving skin on. Bake at 350* for about 45 minutes or until tender. Let cool. Leave the oven on or else turn it off and back on to 350* when assembling casserole.
When cooled, slice potatoes and arrange in layers in a 3 qt casserole, sprinkling apple and pecans between layers. Sprinkle spices lightly over each layer, and if desired some dark brown sugar, but only if you have a strong sweet tooth.
End with a layer of potatoes, then pour the coconut milk creamer over the potatoes, and bake until heated through, about 30 minutes. Before serving, toss potatoes so the bottom layers are mixed with the top layers. Great with cranberry relish! It's also great with chopped dried apricots and washed fresh cranberries (add sugar if using).
