2 cups vegetable broth1/2 zucchini, cut into half moons2 cloves garlic, minced4 baby carrots, diced4 oz Savoy cabbage, chopped1" ginger root, grated1 tsp grated lime zest1 tsp lime juice1 tsp chili flakes2 oz Soba noodles3.5 oz peeled, de-tailed and cooked small shrimp
Bring broth to a boil.
Add zucchini, garlic and carrots. Cook 3 minutes.
Stir in cabbage, ginger, lime zest and juice, chili, and noodles.
Cook until noodles are al dente, about 4 minutes.
Stir in shrimp and heat through.
Serve hot.
