Amazing Lentil Salad

Ingredients
2 cups chopped cucumber1.5 cups chopped fine red onion2 medium red bell peppers chopped 2 cups cooked lentils (green works best)Dressing ingredients:3 tbsp canola or olive oil (calculated with canola)3 tbsp maple syrup3-4 tbsp apple cider vinegar2 tbsp honey dijon mustard2-4 cloves of garlic, minced, or equivalent powdered1 tbsp Greek seasoning blendsalt and pepper to taste
Directions
Prepare/cook lentils according to package directions. Drain and cool. Meanwhile, chop veggies and whisk dressing ingredients together. Combine all ingredients and allow a few minutes for flavors to meld.

    Really tasty salad! I would say the amount of salad dressing is about double what is needed for the amount of lentils and veggies though, but I will surely make this again. We really enjoyed it. :) - 10/22/15
