Pear-Ginger Muffins

Ingredients
Muffins:3 cups all purpose flour3/4 cup sugar1 tbsp baking powder1/2 tsp baking soda1/2 tsp salt1 tsp ground ginger1/4 tsp ground nutmeg1 1/2 cups plain, nonfat greek yogurt2 eggs1 tsp vanilla extract8 tbsp (1 stick) unsalted butter, melted and cooled2 medium pears, peeled and diced into 1/2" chunks1/2 cup crystalized ginger, diced smallGlaze:1 cup powdered sugar2 tsp ground ginger3 tbsp fresh lemon juice
Directions
preheat oven to 375. line or grease muffin pan.

whisk together flour, sugar, baking powder, baking soda,, salt, ground ginger (1tsp), and ground nutmeg in a large bowl. set aside.

in medium bowl, whisk together eggs, yogurt, and vanilla.

fold wet ingredients into dry ingredients. then fold in melted butter. batter will be stiff. finally fold in fresh pear and crystalized ginger.

spoon into prepared muffin pan. bake until tops are golden and toothpick in center comes out clean. approx 30 minutes.

allow to cool for 10 minutes before glazing.

while cooling whisk together powdered sugar and ground ginger. then whisk in fresh lemon juice. glaze should be thick but drizzleable.

drizzle over muffins and allow to stand for 5 minutes before serving.
