Pumpkin protein pancakes

Ingredients
1/2 c. pumpkin puree (canned)1/2 c. dry oat bran1/2 c. liquid egg whites1 t. cinnamonTop with sugar free syrup and/or peanut butter (not included in calorie total).
Directions
mix all ingrediants together in a bowl. Consistancy is a little thick. Spray pan with Pam. Spread across a round frying pan for one large pancake or make a few little ones.

I like to top with a little peanut butter and sugar free syrup... YUMMIE! I make these everytime I want pancakes :) Very healthy and you get one serving of vegetables!

    I make similar pancakes all the time. I add 1/2 cup non-fat yogurt or 1/2 cup greek yogurt to the mix and use regular (not quick) old fashioned oats instead of oat bran. I blend in the blender until smooth. :o) - 2/27/13
