Chicken Posole

Ingredients
2 chicken breasts, cut in chunks2 tblsp olive oil1 red pepper, deseeded and chopped1 yellow pepper, deseeded and chopped1 box of chicken broth(I use Swanons reduced sodium)1 15oz can of hominy or corn, drained4-5 tsp Mexican seasoning or chili powder, 2 additional for soup seasoning2 tblsp cilantrolimes for juice
Directions
Sprinkle chicken breasts with 4-5 tsp of seasoning, heat oil in sauce pan, add chicken and cook, add peppers before chicken is done, cook til chicken is done. Pour in broth, corn/hominy, and cilantro, boil. After brought to boiling, serve and add lime juice from fresh limes.

I serve this soup with sour cream and corn tortillas or tortilla chips. 8 servings
