Simple Chicken Souper

Ingredients
Compliments Low sodium chicken stock 1lYellow onion, 1 medium choppedBoneless, skinless chicken breast, roasted 1Frozen mixed vegetables 1 cupWater 2 cupsMinced or chopped garlic, 2 tbsp. or to tasteThyme 1 tsp. or to tasteCelery seed 1 tsp. or to tastePepper to taste
Directions
In a fry pan cook onion, and garlic in 2 tbsp. of chicken stock, once onion is translucent add chopped chicken breast. Once heated through transfer to a 8 cup pot and add remainder of ingredients. Simmer until vegetables are cooked, spice to taste.
