Red Pepper Hummus

1 pkg dried chickpeas (1lb)4 cloves garlic pressed1/3 Cup extra virgin olive oil1/4 cup fresh lemon juice2/3 C water1/3 C Tahini (sesame paste)2 tsp. salt1/4 cup chopped fresh red pepper3 Tbsp chopped fresh parsley
To cook dried chipeas: Rinse dried peas. Cook covered on medium heat in 1 quart of water until peas are tender. About 2 hours. Drain peas and cool.
Put all ingredients in to a food processor and blend until well mixed. Best served chilled after the dip has had a chance to sit for several hours so that the flavors blend.
Serve with fresh vegies or whole wheat pita bread.
*Tahini can be found in most grocery stores in the mediterranean food section. Usually in a glass jar resembling a nut spread. Be sure to stir the Tahini before measuring as oil settles on the top.
