1 cup dry Quinoa - prepared (4 cups)1 or two large beets, roasted or boiled, peeled and cubed1/2 butternut squash cooked and cubed1/2 red pepper cubed1 carrot cubed1/2 medium onion cubed2 tbsp good olive oil4 tbsp white or red wine vinegar1 bed of raw spinach per serving1 oz of goat cheese for garnish
Mix all the vegetables and dressing except the spinach in a large bowl. Serve 1/4 on a bed of fresh spinach and an ounce of goat cheese
