16 oz spaghetti1/3 C creamy peanut butter1/4 C soy sauce2.Tbls rice vinegar2 Tbls honey1 Tbls hot water2 Cloves grated Garlic3 teas grated fresh ginger root2 C assorted vegetzables example 1/4 C carrots jullianned 10-20 pea pods in bite sized pieces 1/4 C scallions chopped 1/4 C red pepper (bell or hot to taste) 1 C spinach chopped Red pepper flakes to taste 1/8-1/4 teas
Cook Spaghetti while preparing Vegetables. Drain and allow spaghetti to cool while whisking soy sauce, peanut butter, vinegar, honey, garlic, ginger root, pepper flakes and water until smooth. Add up to a Tbls more hot water if too thick. Toss with prepared vegetables and spaghetti. Chill 30 minutes or more before serving.
