Massaged Kale Salad with Dried Fruit & Nuts

1 bunch Kale, washed & cut in ribbons1/8 tsp Salt2 Tbsp Olive Oil1-2 cloves Garlic, chopped1/4 cup dried cranberriesjuice of 1/2 lemon + a little zestsmall handful of pecans
In a bowl, sprinkle the salt over ribboned kale and massage until the kale is softened and deep green.
In a small pan, heat the olive oil and sautee garlic approximately 30 seconds. Add lemon zest, lemon juice & dried berries. Heat only 1-2 minutes, until berries are plump and brighter in color. Toss the mix in with the massaged kale.
In the same pan, toast pecans about 2 minutes or until a slight nutty smell is in the air. Toss these in as well with the kale and berries until thoroughly mixed.
Serve at room temperature or chilled.
