Pesto Tofu Pasta Bowl

Ingredients
2 oz whole-grain pasta1 tbsp - 1/4 C prepared pesto2 oz tofu, cut into 1/4" pieces1 C chopped tomatoes2 C baby spinach2 tbsp grated parmesan
Directions
Make pasta according to directions. In a skillet over medium heat, saute pesto and tofu for 10 minutes (stirring only twice so tofu is golden). Toss hot pasta and tofu w/ tomatoes and spinach (spinach will wilt). Top with parmesan.
