Lamb Stew

1 lbs. cubed lamb4 large carrots, chopped2 stalks celery, chopped1 medium onion, finely chopped1 cup fresh mushrooms, pieces or chopped5 medium potatoes, cubed2 garlic cloves, finely chopped1/2 cup flour12 oz red winewater to covervegetable oilsaltpepper1 bouquet garni2 bay leaves2 sprigs fresh rosemary
Add finely chopped onion and garlic to 10" Le Creuset. Brown with vegetable oil. Mix flour, salt, pepper. coat lamb in flour mix.
Then add to pan with onions and garlic. add remaining flour to pan and stir into lamb. add wine and water slowly and stir.
Add carrots, celery, potatoes, bay leaves, rosemary, bouquet garni and stir. Bring to a boil, take off heat put the lid on.
Place in preheated oven at 325f for 4 hours.
30 minutes before done, add mushrooms and return to oven.
