Roasted Red Pepper Sauce

Ingredients
2 tblsp olive oil1/2 chopped onion2 cloves garlic pressed or chopped1 15oz. jar of Roasted red peppers chopped1 cup chicken or vegetable broth1/2 cup fat free half and halfsalt and pepper to taste
Directions
sauté onions and garlic in the olive oil over medium heat, stirring occasionally for about 2-3 mins. or until they soften, add chopped roasted red peppers and let cook another 2-3 mins. Remove from the heat and pour into a blender or food processor, blending until smooth consistency.
Return the mixture to pan and add, salt and pepper, and broth. Simmer for a few minutes and then add half and half. Heat through
Serve over pasta, chicken or fish

Serving Size: should make about (4) 4 oz. servings
