2 1/2 # Ground Chuck1 Large Onion, Whole, Diced2 Stalks Celery, Diced3 Cloves Garlic, Minced1 can (14.5 Ounce) Can Whole Tomatoes3 Cups Beef Stock, or Beef Broth (Bit more to adjust)1 Whole Yellow Bell Pepper, Seeded and Diced1 Whole Green Bell Pepper, Seeded and Diced1 Whole Red Bell Pepper, Seeded and Diced5 Whole Red Potatoes, Cut into chunks1 Can Tomato Paste1/2 TSP Kosher Salt, To Taste1/2 TSP Black Pepper, To Taste2 TSP Dried Parsley Flakes1/2 TSP Dried Oregano1/2 TSP Cayenne Pepper, To Taste
1) In a large pot over medium-high heat, brown the meat with the onion, celery and garlic.
2) Remove the pot from the heat and drain off as much fat as possible, discard fat once it's cooled.
3) Return the pot to the heat and add the rest of the ingredients. Stir to combine, then bring to a boil.
4) Reduce heat and simmer for 15-20 minutes or until potatoes are soft but not mushy.
5) Soup should be somewhat thick, but if you'd like it to be more "soupy", add 1-3 cups beef broth.
