Low Carb quiche lorraine

Ingredients
1 pckg of thawed, chopped frozen spinach8 slices of turkey bacon1 cup of shredded mozzarella or swiss cheese1/2 an onion, chopped and sauteed til translucent4 tbls of whole wheat flour8 eggs1 pint of half and half1 tsp salt
Directions
Preheat oven to 350 degrees. Spray two pie plates with cooking spray. Divide the spinach between the plates. Cook the bacon until crispy. Set aside. Saute onion til translucent. When the onion has cooled, crumble the bacon and mix in a bowl with shredded cheese, onion and flour. Mix well. Half the onion mixture and put each half in a pie plate. In a bowl, mix eggs, half and half and salt. Put half the mixture in each pie plate. Bake at 350 for 45 minutes.

Serving Size: Makes 2 quiches, 4 servings each
