6 flounder fillets (or other white fish) (frozen)1 can sweet corn, drained of fluid1 can black beans, drained of fluidjuice of 1 lime1 packet taco seasoning1 packet ranch dressing powdercilantro to taste8 small tortilla shellsSpring salad mix.
Mix the corn, beans, lime juice, and packets together in a bowl. Add cilantro and other seasonings as desired. Put the frozen fish in a 9X13 baking dish. Top with the mix. Cover with aluminum foil and bake at 350 degrees for 30 minutes. Put spring salad on a tortillas shell, top with the bean and corn mix and then top with some of the fish. Enjoy!
