Green Bean Soup

Ingredients
12c canned partially drained green beans 3-4 cans of drained white potatos1 lg yellow onion coursely chopped1/2 lb of smoked bacon (turkey bacon can be substituted but I don't recommend it)1 Lg ham bone or ham hock1 pkg turkey smoked sausage2 lg cans of low sodium chicken stock2-3 finely monced garlic cloves1.5T garlic powder1T onion powderblack pepper to taste
Directions
Spray slow cooker with cooking spray. Chop one lg yellow onion coursely and add to bottom of pot. cut 1 lb of bacon in half an disgard, take second half of bacon and cut in half again, placing half of that on top of onions. Place ham bone in bottom of pot. Season ingredients with garlic, onion and garlic powder and pepper to taste. Open canned green beans and drain each can half full, reserving part of the liquid in each can. Add each can and liquid to pot. Open and add canned, drained potatos. Slice and add smoked sausage, placing on top of veggies. place remaining bacon on top and add chicken stock to cover ingredients. Season top of ingrediants with a dash or two of pepper but NO SALT! ( It is salty enough...trust me!) cook on low in crock pot overnight (10 hours) serves apprx 12-15. I usually serve with whole grain crusty bread and light butter.
