Chickpeas with Greens Soup 1 C per serving

Ingredients
1 T Olive Oil1 Large Onion, diced2 Garlic Cloves, minced1 C Carrots, sliced1/2 tsp dried Thyme1/2 tsp dried Basilpinch Red Pepper Flakes2-15 oz cans Chickpeas, drained and rinsed4 C Chicken Broth low-fat, reduced sodium4 C Spinach, torn1 T Lemon or juice from on Lemon1/2 tsp Kosher salt1/4 tsp Black Pepper, freshly ground
Directions
1 Heat oil in large sauce pot over medium heat. Add the onion and garlic and saute for 6-7 min. Add in the carrots and saute for 5 min. Add in the thyme, basil, and crushed dried pepper and saute for 1 min.
2 Add in the chickpeas and broth and bring to a boil. Lower the heat and simmer for 15 min. Puree half the soup in a blender or food processor, add back into the pot. Add in the greens and cook for 1-2 minutes until wilted. Add the lemon juice, salt and pepper and remove from the heat.
