Sausage and Vegetable Bake

1 lb sweet italian sausage1/4 cup shallots, chopped3/4 cup bell pepper, chopped1 cup celery, chopped1 cup baby carrots, chopped2 tbsp extra virgin olive oil3 gloves garlic. minced1 lb potatoes, washed, peeled, cubed1/8 tsp pepper1/4 tsp salt1/2 tsp basil1/2 tsp parsley1/8 tsp cumin1 1/4 cups water1/3 cup reduced fat mozzarella
Preheat oven to 375 degrees Fahrenheit.
1. Prepare all vegetables by either chopping, mincing or cubing according to the ingredient list. Set these aside on your cutting board.
2. Pour the 2 tbs of olive oil in a saute pan and turn the heat to low-medium. Wait a minute for the oil to heat up.
3. Once the oil is heated, dump in the shallots, celery, carrots and bell pepper. Let these cook for about five minutes. Stirring periodically.
4. Add the potatoes, garlic, salt, pepper, basil, parsley, and cumin. Let these cook a few minutes and then pour into an 8x8 glass dish.
5. Brown the sausage in the same saute pan you just used for the vegetables. Once browned, scrape the sausage into the vegetable mixture.
6. Stir to combine. Add in the water and stir again.
7. Cover the dish with foil and bake in the oven for 45 minutes.
8. Remove foil and sprinkle on the mozzarella cheese.
9. Enjoy!
