12 pieces of turkey bacon,baked in oven or microwaveone can of black beans, drained and rinsedone brick of frozen cut leaf spinach, thawed and drainedcarton of egg whitessalsa
into each cup of a 12 cup muffin pan:
*crumble one piece of bacon
*add black beans to fill about half of each cup (you'll have about a 1/2 cup left over)
*divide the spinach into 12 parts, squeezing the water out before you add it to the cups
*slowly pour the egg whites through the spinach, filling the cups
* top them off with a teaspoon of salsa
bake on 350 for 20-25 minutes
