No Chicken Noodle Soup

1 can Sweet corn, drained6 baby carrots, sliced, whole or cut in 21 small onion (or 1/4 large) = 1 cup onion, diced or chopped8 celery stalks, chopped1 container, (32 oz) Organic chicken broth2 Servings bagged egg noodlespepper to taste
Pour Broth into a lg. pan on stove and set to med. high to boil. Add carrots, celery, then onion, and corn as you bring it to a boil. As its boiling add egg noodles. When the the egg noodles are nearly done, add the fresh mushrooms. Turn to Med heat, and allow mushrooms to darken. Serve with pepper to taste. Makes 4 servings.

This recipe was a little misleading because the no-chicken noodle made me believe it was a vegetarian recipe. I altered it a little to make it vegan-friendly using regular noodles, veggie stock instead of chicken stock and added morningstar farms soy "chick'n" strips. It was a very good soup though - 10/5/08
