Sweet potato white bean curry soup

Ingredients
2 med sweet potato1tsp curry powder5 cups veg stock1 med onion1 19 oz can white beans1 tbsp olive oil
Directions
cook onion and curry powder in oil until clear. Add Chopped 1-2 inch pieces of sweet potato(peeled), cook for 2 mins. Add stock and bring to boil, then turn down to med. Cook until sweet potato is soft. Add in Half the beans and puree. Add the rest of the beans and serve. Garnish with a tbsp of maple syrup.
