Cuban Black Beans

Ingredients
1 pound black beans1 Green bell Peppers minced1 medium Onion minced1 Bay Leaf4 cloves Garlic minced1 tsp Cumin salt (to taste)1 can tomato paste
Directions
Wash and sort black beans. Place beans, minced green pepper and bay leave in pot and cover with water. Bring to boil and simmer for 2 hours, adding water as it reduces. Add onion, garlic, tomato paste and cumin and additional water to 1 inch above indgrediants. Return to boil and simmer until reduced and thickened, about 45 minutes.
