Quinoa Salad

Ingredients
1 1/2 c quinoa1 1/2 c boiling water1 c green onion1 tbsp sesame oil1 tsp ginger1 tsp rice vinegar 2 tbsp soy sauceToasted slivered almonds (opt)
Directions
Toast 1 1/2 c quinoa until golden brown. Add to 1 1/2 c boiling water, bring to a boil and cook for 15 minutes. Add green onion. Mix together sesame oil, ginger, rice vinegar and soy sauce. Pour over quinoa. Can be served hot or cold. Top with taosted slivered almonds if you want. Makes 8 1/2 c servings.
