Black eyed pea and Arugula salad

Ingredients
2 cups black eyed peas (can or prepare from dry)1/2 cup chopped tomatoes2 tbsp chopped fresh parsley1/4 cup onion fine dice1/2 cup green pepper diced2 cups arugula roughly choppedsalt and pepper to taste2 tbsp white wine vinegar2 tbsp EVOO
Directions
Combine all the vegetables i a large bowl. Whisk the oil and vinegar together or shake in a small container before pouring over - stir to combine.
