Rhubarb Cake

Ingredients
2 cups diced rhubarb2 cups sugar1/2 cup shortening1 egg1/2 tsp salt2 cups flour1 tsp baking soda1 tsp cinnamon1 tsp vanilla1 cup sour milk
Directions
Mix rhubarb with 1/2 cup sugar and set aside. Cream remaining sugar, shortening and egg. Sift dry ingredients together and add alternately withmilk. Add vanilla and sugar and fruit mixture.

Pour into a greased 9x13 inch pan. Bake at 350 for 50-60 minutes. Sprinkle with powdered sugar or top with whipped cream (not factored into calories).
