Loaded Baked Potato Salad

4 large potatoes 1/4 cup mayo (i use light)1/2 cup sour cream (I use fat free)1/2 cup Shredded Sharp cheddar cheese1/4 cup fresh chives6 strips of bacon, cooked and crumbledBlack pepper & salt (to taste)
Bake potatoes or use leftover ones. Peel skin off and cut into bite size pieces.
Mix mayo, sour cream, cheese (save a little for topping salad), half of the chives together in bowl. Add potatoes and 4 strips of crumbled bacon. Add salt and pepper. Mix carefully.
Top with remaining chives, cheese, and bacon.
Serving Size: makes 4-6 servings
