5 oz of egg plant sliced in 1/8 or 1/4 slices1/2 cup of Panko bread crumbs1 tablespoon of any spice you chose3 tablespoons of non fat or low fat milkmix all dry ingredients into a bowl and in a separate bowl place the milk.dip 1 slice into the milk and then dip into the dry mix and place on cookie sheetyou can sprinkle extra seasoning on if you like
Baked at 425 degrees for 15 minutes or until golden brown and crisp.
