Chicken w/spinach and mushroom cream sauce

3 - 5- 6 oz Chicken breast1 Medium Shallot chopped4 tbls heavy cream4 tbls dry white wine2-4 tbls chopped chives2 cups thinly sliced portabella or shitake mushroomsSalt and pepper to taste2 tbls canola oil1/2 cup Chicken broth
heat oil over medium heat. Salt and pepper chicken and cook in oil until done. Remove from pan tent with foil to keep warm. Add shallot to pan cook until aromatic (about 30 sec to min) add mushrooms and cook until soft (about 2 min) add wine and spinach cook until almost evaporated and spinach is tender, scraping any bits off the bottom (2-4 mins) add broth and simmer until reduced by half. Add cream and chives cook simmer for 2 mins add and coat chicken and serve.
