Cauliflower Tabbouleh

Ingredients
1 head cauliflower - chopped in food processor1/2 cucumber, peeled and diced1/2 red bell pepper, diced1/4 red onion, diced1 medium carrot, grated2 roma tomatoes, seeded and chopped1 large handful fresh cilantro, chopped2 sprigs dill, chopped2 cloves garlic minced1/3 cup lemon or lime juice (or mix of both)2 Tbs extra virgin olive oil1/4 tsp ground black pepper1/4 tsp salt
Directions
Mix vegetables and herbs in a large bowl. Whisk together the garlic, lemon/lime juice, olive oil, salt & pepper. Pour over vegetable mixture and toss well. Cover and refrigerate for 2 hours before serving.
