Tomato Lentil Soup

Ingredients
*1 cup Lentils (dry)*1 each Onion, raw, diced*8 cloves Garlic , minced*2 cups Water*3 cans Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano*2 each Carrots, diced*4 each Mushrooms, chopped*1 tbsp Extra Virgin Olive Oil*6 cups Vegetable Broth*3 tbsp Dry Oregano*3 tbsp Dry Basil*2 tbsp Chili Powder
Directions
-Heat olive oil in large pot
-Cook onions and carrots until they start to brown slightly, about 8 minutes
-Cook mushrooms and lentils for about 5 minutes, just to slightly toast the lentils
-Add garlic and cook until fragrant, about 30 seconds
-Add canned tomatoes, water, vegetable broth, and spices, cook for about 45 minutes or until lentils are fully cooked
